How To Make Scones | Jamie Oliver | AD
So lovely people we're going to makehomemade scones. I love doing this I
probably do it every single week thekids love it. It's really really really
easy and I'm going to be bigging upmy beautiful bakeware range. We're going
to use 500 grams of self-raisingflour. 150 grams of diced unsalted butter
I will put a pinch of salt in because Idon't want them to decide how much salt
goes in I want to put my pinch in. Acouple of teaspoons of sugar in just to
kind of give it an edge of sweetness Idon't want it to be sweet just kind of
take it off of savory okay then I'mgoing to go in with two sort of semi
heaps like that teaspoons of bakingpowder that's going to give it a nice
little rise then what I want to do isjust rub this together it doesn't need
to be perfect if you've got a few bladesof butter sort of in the mix it's all
good it gives lift and rise to yourbeautiful scones so bring that together
a little splash of milk and then I'vegot 150 grams of lovely dried fruit
random you know you go apricot, sourcranberries, cherries you name it you can
do it I just put a little orange juiceon top of it and leave it for about half
an hour just to sort of slightlyrehydrate those lovely fruits and then
literally I'm going to hug this togetherand try not to overwork it okay so as
soon as it comes roughly together likethis I'll cover it I'll let it chill out
in the fridge and then I'll roll it outin about half an hour
So we got some beautiful cutters hereall kinds of shapes and sizes we got the
fluted and the plain a range ofdifferent sizes as well I'm going to
just do a little mixture of all of themreally
just to kind of get the fun going so I'mgoing to go straight on to a baking
sheet I'm going to just add all of theseas long as there the same thickness they're
going to cook at the same time. So we gotour beautiful sour fruits scones there you
can put a little milk on top or a littlebutter I'm just going to use a little
extra virgin olive oil not very classicbut I don't mind it perfect for the job
Brush them on top they'll cook up anabsolute treat. In the oven 180 degrees
Celsius which is 350 degrees Fahrenheitcook those for about 15 minutes until
they've doubled in size gone nice andgolden and then I will put them together
with simple classic clotted cream andjam. So the lovely scones have had a
cheeky little 15 minutes in the ovenlets get them on a cake rack so look these
are rough and ready and they are rusticand I love them this way okay for me
it's all about the flavor and thetexture right crumbly jam clotted cream
gorgeous if you work that dough harderyou will get a more perfect shape and
cut out but I don't think they taste asgood clotted cream has to be one of the
most ridiculous delicacies in the world.Some lovely jam absolute simplicity at its best
So what do you do clotted cream orjam first I go clotted creams but
look you can see how short this gorgeousscone is
