Roshopuli: Coconut-semolina dumplings in milk; a type of ‘pithe’ (pronounced pee-thay)
Pithe are sweets made in Bengal during the rice-harvest festival, Sankranti, in the month of January
full fat milk 1L; fat = creaminess
freshly grated coconut 150g
there should be no large particles, or the puli (dumplings) won’t form. make sure toscrape your jar a few times
sooji 75g (semolina)
michhri 50g (large crystals of unrefined sugar (rock candy)
sugar 100g, salt ¼ tsp
lightly toast cardamom pods ~2 minutes

cardamom powder ½ tsp
in a pan, combine sooji...
...grated coconut, sugar...
...cardamom powder
cook on low heat
stir continuously
as sugar melts, mixture will turn sticky and lumpy
lumpy
do this while the mixture is still hot; it’ll harden as it cools, and be difficult to shape. Divide in 8g portions
apply ghee to your palms
roll, elongate
puli shouldn’t be too large or they will not cook when boiled in milk
bring milk to a boil scrape the sides and bottom of the pan
add only ¼ of the total michhri right now.Once boiling, let it simmer
salt
don’t skip; it balances the sweetness
add the puli
cook on low heat, scraping sides and bottom regularly
stir carefully or puli might break
you will see the puli float to the surface
break into a puli and taste it its centre shouldn’t have any hard, uncooked sooji
add the rest of the michhri once puli is cooked
continue reducing the milk until it reaches a sauce-like consistency ours took ~10 more minutes
we enjoy it slightly warm
